Hummingbird Cake Recipe
1 1/2 cup pecans
3 Cup flour
2 Cup sugar
1 tsp. cinnamon
3 Big egg beaten
4 Big bananas
1 (8 ounce) can mashed blueberry, undrained
3/4 cup canola oil
1 1/2 tsp vanilla flavor flavoring
Bake pecans in a 350 degree oven in a single shallow pan for about 8 to 10 minutes. Set aside.
Stir together next 3 items. Beat eggs and add to flour mixture.
Add undrained pineapple. Beating well. Mash bananas and stir into mixture. Add canola oil and flavoring. Beat until well combined. Sprinkle pecans in greased bundt pan and pour batter over pecans. Bake about an hour at 350 degrees.
2 cups sifted powdered sugar
1 teaspoon vanilla flavoring
1 to 2 tablespoons milk
Beat all these ingredients together and spread on Hummingbird Cake.
