2 cups granulated sugar
1 cup vegetable oil
3 large eggs, room temperature
1 tablespoon vanilla flavoring
4 over ripe bananas mashed with a fork
3 cups flour, if using self rising skip the baking soda and salt.
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Preheat oven to 325 degrees. Lightly grease a bunt pan, Dust with flour and shake out excess.
Place sugar, oil and eggs in bowl of mixer and mix until light and lemon colored. Add vanilla and bananas and mix until just combined. Scrape down sides of bowl. Add flour, baking soda, salt, baking powder, cinnamon, and nutmeg and mix until just combined. Scrape down sides of bowl and pour into prepared pan. Transfer to oven and bake until tooth pick comes out clean. About 1 hour.

3/4 cup semisweet chocolate chips
1/2 cup heavy cream
Method: Place chocolate in double boiler over medium heat and cook until almost melted. Take off heat and stir until chocolate is smooth-gradually add cream, stirring constantly, until smooth.
